Ingredients
Preparation
1. Bowl 1: Beat the sugar, vanilla, butter, and eggs with a mixer
2. Bowl 2: Wisk the flour, baking soda, and baking powder together
3. With a mixer, combine bowl 1 with bowl 2.
4. Place this bowl in the frig for at least 2 hours.
5. Preheat the oven to 350 °F (180 °C).
6. Remove the bowl from the frig and sprinkle some flour on a cutting board.
7. On the cutting board, form the batter in the shape of a log into about 10 inches in length.
8. Cut the log in half, and then further halves until you have 7 cuts totaling 8 cookie pieces. If when cutting the dough is too soft and sticky, then place the log back into the frig with the cutting board.
9. Take one cookie piece and gently flatten it into a thick and round cookie. This is the cookie bottom. If the cookies sticks a little, add some flour on your hands. Place this cookie on a non-stick cookie sheet. Spread the cookies out well and repeat these steps until you have a total of 4 cookies.
10. Place one big tablespoon of Nutella in the center of each cookie and spread it out a little, but not all the way to the edges. Optional: put some chopped hazelnuts on top of the Nutella for an added crunch!
11. With the remaining four cookie’s dough you will form the tops of the cookies. Repeat step 9 and put the cookie tops nicely on top of the Nutella.
12. With your finger, gently tap around the edges of the cookies to close or connect the top cookie with the bottom cookie.
13. Take the side of the knife and gently push around the edges of the cookies so that it is in the form of a nice even circle.
14. Optional: sprinkle some hazelnuts on top.
15. Place the tray in the oven. The cookies will bake for about 17 minutes. They are ready when the corners are medium golden brown and the cookie tops are slightly golden.
16. Let cool for about 10 minutes, if you can resist, and dive in!
* I like to have my kids split one cookie. Any left overs can be stored in the frig and then put in the microwave for 10-20 seconds to warm up.
